When I’m looking for a light lunch dish or appetizer to enjoy for summer, I know I really can’t go wrong with a classic iceberg wedge salad.

This yummy salad is a great way to stay healthy and cool when the weather is getting warm.

And now, I’ve found an incredible twist on this classic, with a Taco Wedge Salad. It’s so easy to make, and the results are out of this world.

In this exclusive video, you’ll see just how easy it is to transform an ordinary head of lettuce into a spicy and delicious lunch alternative. And since you can switch up the toppings any number of ways, you can make it as healthy (or not so healthy) as you like!

Ingredients
  • 1 lb. ground beef
  • 14 cup water
  • 1 package taco seasoning
  • 1 head lettuce
  • Black beans, rinsed and drained
  • 1 tomato, diced
  • Cheese, shredded
  • Thousand Island dressing
Instructions
  • Cook ground beef until browned, and drain.
  • Stir in water and seasoning over heat.
  • Cut head of lettuce into quarters and remove the innermost layers.
  • Top each quarter with seasoned beef, black beans, tomatoes, cheese, and dressing.
  • Serve and enjoy!
