Summer is almost over, but that doesn’t mean that you can’t enjoy the sunshine while it lasts. With a few weeks left before fall officially begins, there’s still time to fire up the grill, soak up the sun, and cool off with delicious frozen treats.
For me, this summer has been all about ice cream. Even though I’ve had fun experimenting with mermaid ice cream and ice cream sandwich cake, my favorite way to enjoy the chilly dessert is in the form of a sandwich.
Ice cream sandwiches are portable, delicious, and so easy to make. With so many delicious flavor combinations to choose from, it’s hard to find someone who doesn’t love ice cream sandwiches!
Though the typical ice cream sandwich is made with two cookies and a scoop of creamy ice cream, this recipe switches it up by replacing cookies with homemade Rice Krispies treats. And with Cocoa Krispies and Fruity Pebbles, you can make a variation of ice cream sandwiches so everyone has a dessert they’ll enjoy!

Do you know someone who loves fun new desserts?
- 3 tbsps. butter
- 4 cups mini marshmallows
- 2 cups Rice Krispies
- 2 cups Fruity Pebbles
- 2 cups Cocoa Krispies
- ice cream
- In a pot, combine 1 tbsp. butter and 1 1/3 cups mini marshmallows until melted and gooey.
- Add 2 cups of desired flavor of Rice Krispies and stir until combined.
- Pour the Rice Krispies mixture into a circular cookie cutter to create ice cream sandwich ends. Scoop ice cream onto a Rice Krispies and top with another Rice Krispies treat.
- Repeat with other fun cereals!
