How To Make Chili In Under 15 Minutes

With autumn fast approaching, it’s almost time to trade in our hot dogs and s’mores for the sweet taste of pecan pies, pumpkin spice lattes, and piping-hot bowls of chili.

When it comes to fall, chili is the quintessential food. The best part about it is that everyone can customize theirs with their favorite toppings, like cheese, sour cream, and jalapeños.

There’s never a bad time to serve up some chili when the weather starts to cool down. My guests always go crazy when I make this spicy three bean chili for Sunday football, or bring this secret ingredient chili to a potluck dinner!

On this episode of LittleThings’ show Slice, chef Dana Arco was challenged to create two back-to-school dinners in 20 minutes or less, and she put her own twist on our favorite fall dish.

As a single mother of one, Dana was more than up to the challenge, and she quickly got started whipping up some grilled-shrimp tacos with a lime and garlic aioli.

In just ten minutes, the mouthwatering shrimp tacos were complete, drizzled with an aioli made with mayonnaise, limes, and garlic.

For her next dinner, the innovative chef made a hearty chili with beef, vegetables, and spices. In less than 15 minutes, the kitchen was filled with the sweet smells of tomatoes, cilantro, and chili powder, and then dinner was served!

Ingredients
  • 12 lb. ground beef
  • 12 onion, chopped
  • 1 12 tbsps. olive oil
  • 2 tbsps. chili powder
  • 1 12 tbsps. cayenne pepper (optional)
  • 8 oz. can sauce
  • 12 can kidney beans, drained and rinsed
  • handful cilantro, chopped
  • 12 cup sharp cheddar cheese
  • 2 dollops sour cream
  • 12 can diced tomatoes, not drained
Instructions
  • In a pot over medium to high heat, heat the olive oil and sautée the chopped onions for a few seconds.
  • Mix in the ground beef until it's cooked 3/4 of the way, then add in the cayenne, chili powder, kidney beans, sauce, cilantro, diced tomatoes, and salt to taste.
  • Stir, then cover for 1 to 2 minutes, until fully cooked through.
  • Place the chili in a bowl and top with sharp cheddar cheese, sour cream, and cilantro, or whatever toppings you choose!
