Ingredients
  • 1 Eggland's Best egg
  • 34 cup red quinoa
  • 34 cup black beans
  • 34 cup corn
  • 1 medium ripe avocado
  • 34 cup salsa
Instructions
  • Bring quinoa and water to a boil in a medium saucepan. Reduce heat to low. Cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes.
  • Fluff with a fork.
  • Add quinoa to a serving bowl.
  • In another pan, cook Eggland's Best egg over medium heat for about three minutes.
  • Top quinoa with black beans, corn, salsa and Eggland's Best egg.
  • Serve and enjoy!
