I’m usually not the one who regularly prepares desserts and fun treats for parties and gatherings, but I’m planning to go all out for St. Patrick’s Day this year.

Ingredients
  • 1 cup butter, softened
  • 1 12 cups sugar
  • 2 large eggs
  • 1 egg yolk
  • 1 tsp. peppermint extract
  • 10 drops green food coloring
  • 3 14 cups flour
  • 1 tsp. baking soda
  • 2 tsps. baking powder
  • 12 tsp. salt
  • 1 tsp. cream of tartar
  • 1 bag chocolate chips
Instructions
  • In a large bowl, beat butter and sugar with electric mixer for 2 minutes, or until light and fluffy.
  • Stir in eggs and yolk.
  • Add in peppermint extract and food coloring, and mix until smooth.
  • In a separate bowl, combine flour, baking soda, baking powder, salt, and cream of tartar. Whisk to combine.
  • Add flour mixture to the wet ingredients, and blend until well incorporated.
  • Add chocolate chips to dough, and combine with spatula until well folded.
  • Cover dough and refrigerate for 45 minutes.
  • Form balls of cough, and place on a parchment-lined baking sheet.
  • Bake in oven for 8 to 10 minutes at 350 °F.
  • Let cool and serve!
