Pour Pancake Batter Into Muffin Tins, Then Bake Into Adorable Breakfast Bites

It’s hard to beat a delicious pancake breakfast! In fact, we’ve never met a pancake recipe we didn’t like.

From this scrumptious cinnamon roll pancake recipe to the plain old biscuit kind you make from the box, it’s hard to go wrong! Of course, that doesn’t mean we won’t keep pushing for new flapjack innovations.

At the moment, we’re obsessed with an easy recipe that magically melds ordinary flat pancakes with delicious muffins.

When all is said and done, you end up with a batch of yummy treats that look like muffins, but have all the fluffy texture of the perfect pancake.

Add a few simple ingredients to jazz up the basic batter, and you are well on your way to breakfast magic. We decided to add some oomph to our version by trying variations with chocolate chips, berries, and nuts.

Ingredients
  • 2 cups pancake mix
  • 23 cup milk
  • 1 egg
  • 1 Tbsp. olive oil
  • Blueberries, walnuts, chocolate chips, or other toppings
Instructions
  • Combine pancake mix, milk, oil, and egg in a mixing bowl. Whip together well.
  • Dollop batter into greased muffin tin.
  • Add any toppings you like.
  • Bake 10 to 12 minutes at 400 °F.
  • Serve and enjoy!
