On LittleThings’ Facebook Live show The Leftover Makeover Challenge, we invite brave and creative members of the food industry to make a new, inventive dish out of — you guessed it — leftovers.

This week, we have invited Chef Derek Lucci to put his culinary creativity to the test. Derek specializes in exotic fare as the chef for makebistro, a Thai food pop-up. On his YouTube channel, he gives in-depth tutorials on how to prep traditional Thai ingredients so that you can try your hand at cooking Asian cuisine at home.

Today, he’ll be stepping out of his comfort zone with an American comfort-food classic: pork chops. With 20 minutes on the timer, Derek will have to transform leftover pork chops into a gourmet meal.

He will also have access to any ingredients in the LittleThings pantry. Some of the pantry items include:

  • Tomatoes
  • Oil, vinegar, soy sauce
  • Lemons
  • Cilantro
  • Peppers
  • Lemongrass
  • Spinach
  • Garlic
  • Potatoes
  • Zucchini
  • Squash
  • Rice
  • Salt and pepper
  • Bread
  • Fresh herbs
  • Spices

The final product will be judged on taste, presentation, and creativity by Tessa Gluck, the social-media star and food expert behind the Foooodieee blog. If her staggering fan base, which includes almost 500,000 Instagram followers, is any indication, Tessa is sure to be a tough judge. Will Derek be able to wow her with an inventive, delicious twist on leftover pork chops?
