With roots stretching to antiquity, Italian-American food is some of the most beloved of all time.
Hearty, traditional recipes have been passed down through generations, most often by Italian nonnas, or grandmothers — like these nonnas who drove around in a tiny house to share their meals with others.
Some of the most mouthwatering and beloved Italian-American dishes include spaghetti and meatballs, sausage and peppers, veal, and — of course — eggplant Parmesan.
Below, we have a delicious recipe for the latter. It makes use of familiar ingredients, but there’s a great twist: it uses a waffle maker, one of the most underestimated of appliances in the kitchen!
- 1 large eggplant
- Parmesan cheese
- Egg wash
- Peel and slice the eggplant.
- Dip eggplant slices into the egg wash.
- Cook in waffle maker until golden-brown.
You will end up with eggplant slices that are crispy on the outside and tender on the inside — and with pockets perfect for holding all that delicious sauce!
You’ll also find that this cooking method is faster than baking it in the oven, or frying it on the stove.
