These Homemade Butterscotch Toffee Pudding Pops Will Be The Best Treat You Make All Summer

Growing up, I loved hearing the sound of the ice cream truck coming through the neighborhood.

I was always the first one lined up to order an ice cream cone or a popsicle from the ice cream man. Not much has changed as I’ve entered adulthood, so when I saw this recipe for delicious butterscotch toffee pudding popsicles, I knew I’d have to try them.

These sweet treats are perfect for the end of a long summer day. We decided to give this recipe a try right here in the LittleThings office, and the results were even better than expected. The whole office was gathered around to enjoy a homemade butterscotch ice pop. And they are so easy to make!

Ingredients:

  • 2 cups milk
  • 1 package butterscotch instant pudding
  • 1/3 cup pecans, toasted
  • 1/3 cup toffee pieces
  • 1/3 cup butterscotch-flavored chips

To make these butterscotch toffee popsicles, you'll need milk, butterscotch pudding mix, pecans, toffee, butterscotch chips, a mixing bowl, a popsicle mold, and popsicle sticks.

Measure out 2 cups of milk and pour it into a medium-sized mixing bowl.

Pour one packet of butterscotch pudding mix into the milk.

Whisk the milk and pudding mix together for 2 minutes.

Place the mix in the microwave on high for 3–5 minutes (until it starts to bubble). Make sure to keep an eye on it, though, so it doesn't boil over!

Cover the pudding mix in plastic wrap and place it in the refrigerator to firm up for 1 hour.

While the pudding firms up, chop the toasted pecans into small pieces until there are enough to fill 1/3 of a cup.

Do the same thing with the toffee chunks, measuring out 1/3 of a cup of finely chopped pieces.

Combine the pecans, toffee, and butterscotch chips in a medium-sized mixing bowl and mix thoroughly.

When the pudding mix has firmed up slightly (but not quite turned into pudding yet), remove it from the fridge and add the dry ingredients.

Stir thoroughly until the pecans, toffee pieces, and butterscotch chips are spread throughout. Feel free to lick the spatula — in fact, we insist you do!

Pour the mix into the popsicle mold.

Cover the mold and place a popsicle stick in each of the slots.

Place the mold in the freezer for 4–5 hours. If you are impatient like me, you can check after 4 hours, but don't take them out too early. You don't want mushy pops!

After they are completely frozen, remove the popsicles from the mold. Then comes the fun part!
