Growing up, one of my favorite types of food were meatballs.

They are just so delicious, and there really are so many different ways to make them.

I am always on the lookout for new recipes to try, so when I saw these unbelievable BBQ bacon-wrapped macaroni and cheese-stuffed meatballs, I knew I would absolutely be making them.

In fact, I decided to try this recipe right here in the LittleThings office. Needless to say, a lot of co-workers came wandering over to investigate the amazing smell of bacon and barbecue sauce. And not only were the results a beautiful sight to behold, they truly were one of the tastiest dishes I’ve had in a very long time!

This recipe was so simple to follow, and it took barely any time at all.

Ingredients:

  • 1 1/2 lbs ground beef
  • 1 onion
  • 1 egg
  • 1/3 cup panko bread crumbs
  • 1/2 cup cheddar cheese, shredded
  • 1.5 oz. cheddar cheese, cubed
  • 1 cup macaroni and cheese, prepared and chilled
  • 4 Tbsp. barbecue sauce
  • Bacon (optional)

This tasty take on meatballs has quickly become a favorite for all of us here in the LittleThings office — and I most certainly will be making them for my next barbecue!
