As a breakfast fanatic, I truly believe that breakfast food is the answer to all of the world’s problems. There is nothing that a fluffy stack of pancakes drizzled with maple syrup and an episode of House Hunters can’t fix.

However, since I’m always rushing out the door to get to work, I never have time to prepare the breakfast foods I want. I’ve come to rely on cereal and yogurt on the weekdays, but eating the same thing every morning gets repetitive and dull after a while.

Unlike other breakfast foods that quickly get bland, these banana pops can be customized with any type of cereal or topping your heart desires to keep things interesting. I can’t wait to make mine with peanut butter granola and chocolate chips!

Ingredients
  • 3 bananas, halved
  • 6 popsicle sticks
  • 32 oz. plain greek yogurt
  • 1 tbsp. sugar
  • 1 tsp. coconut extract
  • toasted coconut
  • granola
  • cereal
Instructions
  • Stick popsicle sticks into flat side of each banana half.
  • In a bowl, combine greek yogurt, sugar, and coconut extract.
  • Cover each banana thoroughly with greek yogurt mixture and dip into granola, toasted coconut, and cereal so it is covered completely.
  • Lay bananas on a baking sheet lined with parchment paper and freeze overnight.
