- 2 avocados
- 2 Tbsps. oil
- 2 eggs, beaten
- 1 cup panko bread crumbs
- Preheat oven to 400 °F.
- Peel and slice avocados.
- Cover slices in oil, salt, and pepper.
- Dredge avocado slices in flour.
- Dip slices in eggs, then coat in bread crumbs.
- Place on greased sheet pan.
- Bake for 15 to 20 minutes at 400 °F.
- Serve with dipping sauce and enjoy!
